Ingredients
500gr (1 lb) pangasius fillet
Salt, sugar, black pepper, seasoning powder
A tablespoon of chopped onion
A tablespoon of chopped garlic
8 lemon grass pieces*, 10 cm (4’’) long
Sweet and sour sauce
1/2 cup of coriander leaves
Intrucstion
Pangasius:
- Season pangasius fillet with salt, sugar, seasoning powder, black pepper, onion, garlic and coriander leaves. Pound the seasoned mixture in a mortar
- Using the oil, divide the mixture into 8 equal parts, then paste the pangasius around the lemon grass until tight. Then grill over medium charcoal heat until crisp and golden brown.
- Serve with sweet and sour sauce and salad (of choice)
Tips:
Instead of pounding the fish paste by hand in a mortar, you can use a blender or a food processor to save time.
If you don’t have access to charcoal grill, you can deep-fry the paste with oil or use air-fryer
