PANGASIUS PASTE ON LEMON GRASS

Ingredients

500gr (1 lb) pangasius fillet

Salt, sugar, black pepper, seasoning powder

A tablespoon of chopped onion

A tablespoon of chopped garlic

8 lemon grass pieces*, 10 cm (4’’) long

Sweet and sour sauce

1/2 cup of coriander leaves

Intrucstion

Pangasius:

  1. Season pangasius fillet with salt, sugar, seasoning powder, black pepper, onion, garlic and coriander leaves. Pound the seasoned mixture in a mortar
  2. Using the oil, divide the mixture into 8 equal parts, then paste the pangasius around the lemon grass until tight. Then grill over medium charcoal heat until crisp and golden brown.
  3. Serve with sweet and sour sauce and salad (of choice)

Tips:

Instead of pounding the fish paste by hand in a mortar, you can use a blender or a food processor to save time.

If you don’t have access to charcoal grill, you can deep-fry the paste with oil or use air-fryer
