Prepare Materials

110g – 170g pangasius fillet
16ml extra virgin olive oil
30ml yellow lemon juice
2g chopped parsley
2 cloves of garlic, minced
Dried basil
2 large ripe mangos
1 red bell pepper, diced
1 large purple onion, chopped
6g chopped fresh coriander
2 seeded jalapeno peppers (depending on how hot you want them to be)
60ml green lemon juice
Salt and ground pepper

Implementation Guide

1. Marine the fish:

• Mix extra virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper and 1/2 teaspoon salt in a bowl and put it all in a zip-top bag.

• Add pangasius fillets, put in the marinade bag to absorb evenly, vacuum and seal the bag.

• Marinate in the refrigerator for 1 hour.

2. Make Salsa Sauce:

• Peel the mango, remove the seeds and dice.

• Place mango and diced red bell pepper, minced red onion, cilantro, and jalapeno in a bowl.

• Add green lemon juice and 1 tablespoon yellow lemon juice, and mix well.

• Season with a little salt and pepper and refrigerate.

3. Heat the pan.

4. Remove the pangasius from the marinade, and shake off the marinade. Discard the marinade.

5. Grill the fish for about 3 to 4 minutes on each side, depending on the thickness of the fillets.

6. Arrange grilled catfish with mango salsa.
