INGREDIENTS: (for 3 persons)
3 large pangasius fillets
1 1/2 cups unbleached flour
1 cup seasoned bread crumbs (like Italian bread crumbs)
3 eggs beaten
5 tbsp full fat milk
3 tbsp black and white sesame seeds
2 tsp coriander powder
2 tsp cardamom powder
1 tsp paprika (sweet smoked or regular)
salt and pepper to taste
Preheat oven to 425ºF.
On a plate, mix the flour, spices and sesame seeds.
In a bowl whisk eggs and milk
Place the bread crumbs on a plate.
Flour each fillet, dip in egg well, and flour it again
Dip the fillets in egg again, then place in breadcrumbs, pat down well so the breadcrumbs stick on the fillet
Place the breaded fillets on a sheet lined with parchment paper.
Place in the oven for 10 – 13 min.
